Easiest Guacamole Ever

Some days life should just come easy, but we all know that doesn't happen a majority of the time. A majority of the time we feel plain gross, causing us to shout at our loved ones, while feeling pressure to accomplish various human tasks that seem insurmountable and super important, and on and on the list of stressful things go, which I won't continue to ruminate on because the longer I do the higher my blood pressure rises. Cue something easy. Easiest Guacamole Ever. No chopping, not much mixing, ready in 5 minutes flat. And don't we all need something easy?

So, here's the deal. Grab a container of pico de gallo in your local grocer's deli or produce section. Add some avocados and a fresh lime to your cart. Once you get home, scoop the avocados into a large bowl, squeeze with fresh lime juice, mash, stir in pico de gallo. You are done - I know, you can't believe it either - you are really, really done. Don't just think chips and gauc. Think about topping your turkey burgers with this stuff - simply ahhhh-mazing.

Easiest Guacamole Ever

3 ripe avocados
Juice of 1 lime
1 cup pico de gallo
Kosher salt and freshly ground pepper

Slice avocados in half, remove the pit, and scoop flesh into a large bowl. Squeeze lime juice over avocados. Using a potato masher, mash to desired consistency, I like mine a little chunky. Gently fold in the pico de gallo. Season to taste with salt and pepper. Serve immediately or refrigerate covered with plastic wrap directly on the surface of the guacamole to prevent browning.
