Coconut Oil Popcorn

Who doesn't love popcorn? Show me the man who doesn't love popcorn and I'll show you the man deprived of life with je ne sais quoi, or the joie de vivre as the French say. Oh, la la I'm Lady Marmalade. And my knowledge of French sayings ends. My girlfriend hosted Ladies Night and served her version of Coconut Oil Popcorn which I had to immediately recreate in my own kitchen, because if you know me - I. Adore. Popcorn. Like, a lot. The popcorn I used is from the co-op I serve as a Board Member to - the Local Roots Food Co-Op. It's organic and local - score and double score. Guilt free snacking - think after school snack, kids are home for the weekend - big bowl of popcorn sitting around, or an in-home moving night - of course! Getting your fill on healthy fats, fiber-licious, crunch-tastic, salt-lastic, hmmm-mmm, yummy-lation. Love these cute dollar store popcorn bags I picked up, too! Start poppin' people. 

P.S. I like white kernels because 1. The color is white - really, brightly white and brightly white things give me aesthetic pleasure 2. Don't trust me on it, but I swear I read somewhere that white kernels are better for you because of something to do with GMO's or something.

Coconut Oil Popcorn

1/4 cup + 1 tablespoon coconut oil (divided) (up to 2 tablespoons - depending on how "buttery" you like your popcorn) 
1/2 cup white corn kernels (preferably non GMO, organic)
1 teaspoon fine table salt

Over medium-high heat, melt 1/4 cup coconut oil in the bottom of a heavy kettle with a tight fitting lid. While oil is heating up place two kernels of corn in the covered kettle, when a kernel pops the oil is hot enough for the remainder of the kernels. Pour in kernels, cover and stand by! 

Give the kettle a shake every 30 seconds or so. As the kernels reach the end of their popping time, make sure to continuously shake the kettle, to prevent burnt kernels. Once you hear the kernels dying down to popping every 3 seconds or so remove lid, pour hot popcorn into a large bowl. 

Melt remainder 1 or 2 tablespoons of coconut oil and pour over hot popcorn, sprinkle with salt, stirring and combining.  Crunch away.
